Chicken Fry (Andhra Style)




Another easy recipe of chicken after my simple fish fry! I'd happen to make this recipe every month to share with our coterie and every time, it was a smasher! You could pair it up with dal- chawal or snack on it with a dash of chaat masala and lemon juice.  Today, I had this chicken fry as a snack. 



To make this recipe, you'll need : 

Chicken
500 grams
Red chilli powder
1 ½ tablespoons
Coriander powder/ dhania
1 ½ tablespoons
Cumin powder/ jeera
2 teaspoons
Turmeric powder/ haldi
½ teaspoon
Garam masala powder
1.5 teaspoon
Chicken masala powder (optional)
1 teaspoon
Salt
3/4th teaspoon (or) to taste
Ginger garlic paste
1.5   tablespoon
Lemon juice
1/2 wedge
Corn flour
1 tablespoon
Curry leaves
A few
Green chillies (slit)
3 nos
Chaat masala
To sprinkle

Method : 

1. Add all the ingredients to the cleaned, washed, pat dried chicken pieces. 
2. Marinate for about 1 hour. 
3. Fry the chicken pieces in the moderate hot oil until done. 
4. Finally, add curry leaves and green chillies to the oil. let them splutter, remove and add to the fried chicken.

Add garam masala



Add chicken masala 




Add salt 



Add ginger-garlic paste 



Mix well 



Add lemon juice 



Add corn flour, mix well and marinate for 1 hour. 



Fry in moderate oil until done. 



Add green chillies and curry leaves, fry them and add to the fried chicken. 
Sprinkle chaat masala , lemon juice and relish with onions.

Notes : 
1. Many prefer, chicken fry on the spicy side. So add red chilli accordingly. 
2. If you're using home made garam masala, cut down to half of the measure. Home made are fresh and pungent. 
3. You can also add a spoon of all purpose flour/ maida, rice flour to the chicken.

Simple Fish Fry


Fish is one of the healthiest foods on this planet. Today, I used Rohu, river fish in this recipe. Fish fry can be made in many ways, this is the basic one of South India. I like eating this fish fry with dal and rice. You could deep fry the fish or shallow fry it. 



To make this recipe, you'll need : 

Fish
1 whole fish cut into steaks, 900 grams approx
Red chilli powder
2 tablespoons
Turmeric
½ teaspoon
Coriander powder/ Dhaniya
2 tablespoons
Cumin powder/ Jeera
1 teaspoon
Salt
½ tablespoon (or) to taste
Oil
As required to fry the fish

Yes, there is no ginger- garlic paste, lemon juice, or any special garam masala. When the fish is fresh, just the basic ingredients will do. 



                                                                   
                                                 Method : 

1. To the cleaned and washed fish pieces, add all the above ingredients, mix well and marinate for half an hour. 
2. Fry the fish in a medium-hot oil until done.

After marination, fry the fish until done.

Notes : 

1. If your fish is not fresh, you could add ginger garlic paste, lemon juice to enhance its flavor. 
2. You could also add cornflour to this fish marination for a crispy crust.

Egg Burji/ Anda Burji/ Indian Scrambled Eggs


Egg burji is one of the easiest dishes to prepare. The preparation of egg burji varies from place to place. If you are new to cooking, you will find this recipe easy to make and I hope you will enjoy cooking this recipe because you could customize it accordingly. You could add veggies like bell peppers, mushrooms, spring onions. Also, instead of Indian spices, you could substitute with the best pair of salt and pepper. To jazz it up, add cheese, mixed herbs and some cream. Don't be afraid to play on the flavour profile. If you mess up, you'll end up learning something new! Nobody has become an expert in a day. To Make This Recipe, You'll Need : 

Eggs
4 Nos
Onions
2 Medium sized
Tomatoes
2 Medium sized
Green chillies
1
Oil
1 to 2 Tablespoons
Red Chilli Powder
1 to 1 ½ Teaspoons
Turmeric  Powder
1/4th Teaspoon
Chicken  Masala Powder
1 Teaspoon
Garam  Masala Powder
½ Teaspoon
Salt
1 Teaspoon (or) To Taste




Method : 

1. Begin by adding oil to a hot pan, followed by the onions and green chillies. Cook until onions go translucent.
2. Add the tomatoes, red chilli powder, salt, garam masala, turmeric, chicken masala and cook until done.
3. Now crack an egg in a small bowl and add each egg at a time to the pan  (This is a precaution, sometimes you may end up with a bad egg. If you directly add to the pan, everything's gonna be a mess.) 
4. Scramble the eggs slowly and gently. Cook until the eggs are just done. 



      That is it!! 



            Enjoy it with any Indian flat pieces of bread, toasts or rice!

Pepper Mutton Fry / Peppery Mutton



This is one of my favorite dishes. It is easy to make, no fancy ingredients are needed. Just the daily kitchen basic ingredients would do the magic :). I had this with plain rice, You could serve with dal rice or chapatis. Be free to adjust the seasonings according to your taste buds. 



To Make This Recipe, You'll Need : 


Mutton
½ Kg
Onions (Sliced)
2 (Medium Sized)
Green Chillies ( Slit, deseeded)
2 to 3
Curry Leaves
Few
Pepper Powder
2 ½ Teaspoons (or) to taste
Salt
½ Teaspoon (or) to taste
Ginger – Garlic Paste
1 Tablespoon
Garam  Masala Powder
½ Teaspoon
Turmeric Powder
¼ Teaspoon
Oil
2 Tablespoons


                   

                    

                   

And Oil (no picture).

Method : 

Begin by adding 1 Tablespoon of oil to a pressure cooker, followed by washed and cleaning mutton pieces. Saute it for a minute. Add turmeric powder, salt, 1/2 a cup of water and pressure cook the meat until it's cooked through. (Tender the meat, faster it gets cooked).



Check the meat for its doneness before proceeding to the next step. Add 1 tablespoon of oil to the kadai, heat the oil, and add slit green chilies, curry leaves, saute it for a minute and add sliced onions. Slightly season the onions with salt so that they get cooked faster. Cook the onions until they turn translucent, add ginger garlic paste, saute it for a minute and add the pressure-cooked meat followed by pepper and garam masala. Mix well. 





Check for taste, adjust the seasoning if required, garnish with cilantro and serve :)






 Notes: I have removed the seeds from the green chilies to cut down the heat. If You're using chilies with the seeds, use 1 chilly.

Spicy Chicken (Dry)


I enjoyed this Spicy Chicken with white rice and dal. This is an easy and simple way of making a chicken recipe.


To Make This Recipe, You'll Need :

Chicken
1.5 kgs
Onions
2 (Sliced)
Red chilli powder
2 ½ Tablespoons
Ginger Garlic Paste
1 Tablespoon
Coriander Powder / Dhania
1 Tablespoon
Salt  (I use Low Sodium Salt)
1 ½ Tablespoons ( or ) To Taste
Chicken Masala
1 Tablespoon
Lemon Juice
1 Tablespoon ( No Picture)
Oil
4 Tablespoons ( No Picture)
Cloves
5 Nos
Cinnamon
2 Sticks
Cardamom
2 Nos






Method : 
Begin by adding all spices and seasonings, lemon juice ( except the Star anise, cinnamon, cloves, and cardamom) to the washed, cleaned, and pat dried chicken pieces. 
Mix everything well (you could rest the chicken for half an hour). Next, add oil to a pan or kadai, add the leftover spices, fry them until they are swollen, and add the sliced onions. Fry the sliced onions until they turn slightly brown in color. 




Now add the chicken pieces to the onions and cook until the chicken gets cooked ( with the lid covered. Keep stirring in between). It takes approx 30 minutes on medium flame. 


If you don't want your chicken slightly on the gravy side, then increase the flame and cook uncovered so that the water gets evaporated, Finally garnish with coriander.
